Sopaipillas Inspired by Kuyén

Moon goddess kuyén is a goddess of the Mapuche people of both Chile and Argentina. She is known for representing all three phases of the moon and controls the waters of the Earth. She is the wife of the sun god, Antu. He struck her once so she stays away from him and will continue to do so until she is completely healed but they still love each other and he tries to win her back and does not get tired of doing so. They gave the gift of their daughter to both Earth and man, allowing her to become the first woman and a mother to all.

As she was featured in the magazine, we are also going to be calling on her with this Chilean Sopaipillas Recipe!

Ingredients:

  • 2 Cups Flour
  • 2 Tsp Baking Powder
  • 1 Tsp Salt
  • 10 Tbsp Butter, melted
  • 2 Cups Pumpkin Puree
  • Vegetable Oil

Instructions:

  1. Combine flour, baking powder and salt in a large bowl. Add the pumpkin puree and melted butter and mix thoroughly until a dough forms.
  2. Lightly flour a flat surface and knead the dough until it is smooth, adding more flour when necessary.
  3. Cover the dough with a towel and allow to rest for 20 minutes.
  4. Roll the dough out to be 1/4 inch thick and cut 3″ diameter circles. Poke each circle a couple of times with a fork to make a few holes and prevent more rising.
  5. Pour some vegetable oil in a deep skilled and heat until it is hot. Place a few of the dough circles in the hot oil and cook until they are light brown, about 3 to 4 minutes.
  6. Remove to a plate lined with paper towel to get the excess oil and serve warm.
