Banana Nut Bread – Inspired by Quan Yin

This week, we are honoring the Buddhist goddess of compassion, Quan Yin! She nurtures and cares for all that seek her. One of the fruits that is often used when creating an altar for Quan Yin are bananas, which is why this week, we will be seeking Quan Yin when making warm Banana Nut Bread! 

Ingredients:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • Dash of table salt
  • 4 small ripe bananas
  • 1/2 cup chopped walnuts or pecans

 

Directions:

  1. Beat butter at medium speed until creamy. Gradually add sugar, beating until light and fluffy. Add eggs one at a time making sure to beat well after each addition.
  2. Combine the flour, baking soda and table salt and mix thoroughly together. Add this to the butter mix at a low speed. 
  3. Peel the bananas and mash until they are no longer a solid form. Add the bananas and nuts to the mixture and mix well. 
  4. Spoon the mixture into a greased and floured loaf pan. 
  5. Place in cold oven and set to 300 degrees. Bake for 1 hour and 20 minutes.
  6. Let cool for 10 minutes after sticking tooth pick in the middle to ensure the bread is completely cooked in the middle. 
  7. Remove from pan and let cool an additional 40 minutes on a wire rack.
  8. Enjoy!
