Orange Chicken Inspired by Artemis

Greek goddess Artemis is known for being the goddess of both the moon and the hunt. She brightens the darkness and helps to bring light to our paths. Artemis is known very well for keeping her virginity and being extremely independent. She made her own choices and lived the life that she chose, making decisions for herself and choosing her own terms. She valued love of family and friends. 

Goddess Artemis had a younger brother who was born not long after her, but she acted as his mother, causing her to be known strongly for being a goddess of both infants and childbirth. She is also known for protecting children, animals and women. Artemis was an incredible hunter and hunted alongside her brother with her bow and arrow but respected the lives that she hunted and looked for justice for those animals that were killed on the wrong terms. 

Artemis is strong and when calling on Artemis and creating an altar, many associate oranges as being one of the many fruits and herbs that are used when calling on Artemis. This is why we are honoring Artemis with the following Orange Chicken recipe.

Orange Chicken

Ingredients:

  • 6 whole boneless chicken thighs 
  • 1/4 Cup all purpose flour
  • 1 Tbsp. corn starch
  • 1 Tsp pepper
  • 1 Tsp onion powder
  • 1/2 Tsp ginger powder
  • 1/2 Tsp salt
  • 1 Tsp paprika
  • Vegetable oil for frying

For Orange Chicken Sauce:

  • 3/4 Cup orange juice
  • 1 1/2 Tbsp corn starch
  • 2 Tbsp Vegetable oil
  • 3 Tbsp low sodium soy sauce
  • 1 1/2 Tbsp white vinegar
  • 2 Tbsp brown sugar
  • 1/2 Tbsp grated ginger
  • 2 Minced garlic cloves
  • 1/2 Tsp pepper
  • 1 Tsp orange zest

 

Instructions:

  1. Cut the chicken into half inch cubes and place in a bowl. Add the flour, corn starch, salt, pepper, onion powder, paprika, and ginger to create a coating for the chicken cubes.
  2. Place a deep frying pan on the stove over medium heat and add oil. Bring the oil to temperature and add the diced chicken for approximately 2-3 minutes.
  3. Whisk the sauce ingredients in a medium bowl. Once completely whisked, add to a hot sauce pan and cook on low heat until the sauce is thick.
  4. Add the fried chicken to the sauce and ensure it is completely coated. Allow the sauce and chicken to simmer together for a few minutes and then remove from heat.
  5. Enjoy!
